Mame Gohan

Sekihan
Different from Takikomi-Gohan, there is also Mame(beans)-Gohan as a popular rice menu. Mame-Gohan usually doesn’t use Dashi or soup. Cook rice with only beans, water, and salt. This is because the sensitive beans’ deliciousness could easily vanish. All beans, like Edamame, go best with salt. It’s enough—no need to add another ingredient. You can realize and would be surprised how delicious beans is. The picture on the right shows Sekihan which contains adzuki beans or red black-eyed peas. Both give beautiful red color to the rice. The rice for Sekihan is used ßbecause it is glutinous, and the texture is a little bit different from usual rice. It is sticky. Sekihan is also special food for celebration because of its color. Red is believed to be the color of good fortune.
Onigiri Onigiri is a rice ball. This is Japanese soul food. Rice and side dishes like pickles, fish powder, etc. Nori(seaweed) is often used for it. Onigiri is a super functional food. It is compact, portable, and easy to eat. No cutlery is required, and good for the stomach. It’s perfect food.

This is how onigiri is made. Onigiri means “glab”. Being made by grabbing, it was given the name.
You can put any dish you want into or on top of the rice. Rice can accept any type of flavor.
Yaki-onigiri This is the grilled onigiri. This is such a beloved Onigiri. Grill it and spread soy sauce on the surface and keep grilling until browned beautifully. A savory smell of burnt soy sauce and rice wafts through the air! It is a very popular food at BBQs. Also, Izakaya(a casual alcoholic restaurant)often serves it. One caveat. When you try to make it, don’t spread soy sauce before grilling. After grilling for a while(3~5minutes), get the surface hardened. After that, spread the soy sauce. Otherwise, the rice will be untied. I often failed before. And more. please eat it freshly made!
